A fresh lobster roll is the classic Maine lunch, and this lobster roll recipe is easy to make.

Little Michael doesn’t go in for the gourmet lobster presentations; he prefers a simple, genuine Maine lobster roll.

Start with 2-3 oz. fresh Maine lobster meat per roll, cut into bite size pieces, and mix the lobster meat with your desired amount of mayonnaise.  Light mayonnaise is healthier, but real mayonnaise is tastier, and Michael likes his lobster meat served in a warm hot dog roll, buttered and grilled in a frying pan until golden brown. Add a bed of crisp lettuce, sprinkle some paprika on top, and you have a sandwich that is sure to please.

It’s also a great way to use any leftovers from last night’s lobster dinner.  Not that we usually see any leftovers.  🙂

  1. I like to add some old bay seasoning and a bit of balsamic vinegar

    Some might not like the darker look caused by the vinegar, but it is worth it for sure

  2. Right on with the old bay, i also add some fresh lemon juice and minced up fresh crunchy celery. Serve on a nice grilled or fresh grinder roll from from a real bakery!!
